Ashi asked me for the recipe regarding traditional German "Maultaschensuppe" (swabian pocket soup). I am from "Schwaben" (swabian), that’s roughly the south - west area of Germany and we eat that soup mostly on cold days because it has a lot of energy, is very healthful and warms up . Furthermore we swabian guys have the reputation to be very economical and stingy and that soup fits to that because it was in the past basically made of remnants.
The "Maultaschen" looks basically like that:
recipe for ~ 4 persons:
For the dought/pastry (Teig) you need:
-> 300g flour (Mehl Type 405)
-> 3 - 4 Eggs (Eier)
-> 100g samolina (Gries)
-> a little bit salt (bisschen Salz)
-> a little bit water (bisschen Wasser)
-> a little bit olive oil (bisschen Olivenöl)
Just put that stuff together and mix it as long it doesn’t sticks on the dish anymore (bis sich der Teig vom Schüsselrand löst). Now wait one hour (eine Stunde Ruhezeit).
Then: Roll it out (it should be 1 - 2 mm thick) and cut some squares out, the size depends to you (1 - 2 mm dick ausrollen und Rechtecke ausschneiden).
Now put some mincemeat (Rinderhackfleisch) with chives (Schnittlauch) and parsley (Petersilie) on the squares and close the squaren (so they cant loose their contend in the soup). You can do this like a sandwich: one square on the top, one square on the bottom and the meat between or just roll it .
The soup depends to you, be creative. I Like it like that:
-> 1 - 2 Liter Water
-> 1 onion (Zwiebel)
-> some leek (Lauch)
-> some mushrooms (Pilze)
-> some carrots (Karotten)
-> a bit garlic (Knoblauch)
-> max. 1 hot habanero
-> Broccoli
-> olive oil
Hackle the vegetables in big peace’s and let them cook in the water for minimum 30min.
Make some meat balls out of some mincemeat and put them together with a bit of maggi instand soup (pottage) and the "Maultaschen" in the soup and let all cook another 30mins.
Now it should look more or less like that:
